Tonight I am honored to be introducing the benefits and ease of grinding your own wheat to a local group of women, at least I don't think there will be any men there. But if there are that is awesome! The more people I can share this with the better!!!
First, for those that were not able to attend let me share how I got into all this in the first place...
My husband is what I call a survivalist, others would call him a prepper. He insists we need to be prepared in case the world as we know it comes to an end. So when he started talking about storing wheat I asked him what he planned to do with it. He said that I was to bake bread with it. Of course I laughed and told him he was crazy!
About the same time I met my friend Melissa (click here for her blog) who I soon found out grinds her own wheat and bakes bread with it! Interesting that I was more easily convinced by my friend than my husband!!! Anyway, Melissa gave me her old Bread Beckers recipe book and I immediately ordered the free CD from their website.
One of the sections of this CD made a huge impact on my view of this whole grinding wheat idea. It quickly went from just being able to use the wheat we have stored to changing to a more healthy eating lifestyle and avoiding processed foods as much as possible.
Almost 4 years ago I made an investment in our health and bought a WonderMill and a Cuisinart. Then I had my husband bring me a couple buckets of the wheat he had stored and started baking bread. Yes, it really was that simple. I started with the bread, and also muffins, waffles, and homemade instant oatmeal. Click on the links for the recipes. The oatmeal does not use the wheat mill, but it was a big part of the change we made so I included it here as well.
Here is my detailed blog post on the steps I follow to making bread. The post really did take longer to write than it does to mix the dough!
Recently I have expanded and have made Ezekiel bread, where I used the bread recipe but substituted Ezekiel mixture flour for wheat flour. I also made some Oatmeal Cookies and my hubby experimented with Wheat Chips.

Menu Plan Monday

My menus must be quick and easy and I have found that I use my crockpot at least twice a week! Here is my menu plan for this week.
Breakfasts are Cereal, Whole Wheat Waffles , Homemade Oatmeal, or Whole Wheat Bread with PB&J. Wow! I am still amazed that other than having store bought cereal and PB&J, the rest of our breakfasts are made from scratch!!!
Lunches are usually Leftovers
Suppers this week are:
Monday Crockpot Stew
Tuesday Chili
Wednesday Pasta & Veggies (if I find time to go grocery shopping and get the fresh veggies!)
Thursday Southwestern Pot Roast
Friday Pizza Night (maybe I will try a homemade pizza - have to see how the week goes and if I get out to get groceries!!!)
Saturday Scott's Hamburger Soup
Sunday Chicken (have not decided on a recipe yet)

Quick Oatmeal
I love the convenience of the store bought oatmeal packets and never considered making my own until I found this recipe. Unfortunately I can't remember where I found it to give the credit. Sorry!
With this you can make a batch and store it, making only as much as you need. Although we go through this pretty fast!! Mix together:
8 cups quick oats
1 1/2 cups packed brown sugar
2 tsp cinnamon
1 tsp salt
2 cups powdered milk
The recipe I found said to just add hot water, but did not say how much. I have been adding about an equal amount of water (such as 1 cup water to 1 cup mixture) and microwaving for 2 minutes or less.

1 Tbsp Parsley Flakes
11 shakes lemon pepper (I usually add more than that)
1 1/2 tbsp Bon Appetite
If you can find Bon Appetite!! I couldn't find it here and had to call my mom to find out what exactly it is. Basically it is a salt, onion, celery powder mixture with MSG. I found something called Beau Monde Seasoning and it worked fine just no MSG. If you can't find those I would make mixture of onion salt and celery salt.

Need to fix the links
When I changed the name of my blog I did not think about all the links I would also have to change. I realized this when I posted the Menu Plan for today. All my links to my recipes need to be updated. This will take a little while, I seem to be otherwise preoccupied with potty training!!

Chili
This is my Mom's recipe except that I use black beans instead of kidney beans(yuck). It is very zippy (technical term!) so use less seasonings for a milder chili, especially the chili powder.
1-2 lbs ground beef
1 med onion, diced
Brown beef & onion then drain
Add the following ingredients:
1 can tomato soup
1 can tomato paste
1 can diced tomatoes
1 can beans
1 can mushrooms
1 can corn
3 stalks celery, diced
Also add seasonings,
1 tsp Chili Powder (less for milder chili)
1/2 tsp Paprika
1/8 tsp Cayenne
1/2 tsp Garlic Salt
1 1/2 tsp Salt
1/4 tsp Pepper
1-2 lbs ground beef

These are very yummy and passed the kid test. My kids went from Eggos to these without any question or complaint! In fact they preferred these and asked for them again and again!!!

3 cups freshly milled flour
1 tsp salt
4 tsp baking powder
Add liquids:
1/2 cup oil
4 eggs
3 cups buttermilk (add 1 tbsp vinegar for each cup of regular milk to substitute for buttermilk)
Stir until just mixed, pour onto hot waffle maker. Makes about 20 waffles that freeze well.
Mix together dry ingredients:

Southwestern Pot Roast
This is the most simple meal I prepare - less than 15 minutes!
8 small or 4 med-lrg potatoes, cut into large chunks
1/2 pound baby carrots
1 large onion, cut into large slices
place potatos and carrots on bottom of crockpot
Coat 2-3 lb roast (trimmed of fat) with 1/4 cup of flour (I keep the extra flour I grind when I make bread for this purpose) and place floured roast on top of potatoes and carrots, place onions in any spaces or on top of roast
Pour 1 jar (16-20 oz) medium salsa over all
Cook for 6-7 hours in crockpot
Edited to add that I really must give the proper credit for this recipe, it certainly isn't my idea!! It comes from the Oct-03 #201 issue of Betty Crocker Slow Cooker Meals.

Juicy Meatloaf
This recipe came from my mom's church cookbook. I simply adjusted the seasonings to make it "zippier" (Yes that is a technical cooking term, at least it is in my family!)
2lbs ground beef
1 large onion, chopped
3/4 cup oatmeal
2 eggs
1 cup tomato juice (I often use V8)
Seasonings:
1 tsp lemon pepper
1 tsp seasoned salt
1/4 - 1/2 tsp garlic powder
1/2 tsp paprika
Mix together then form into a loaf shape in a 9x13 glass baking dish. Bake at 350 for 1 hour, let stand for 5 minutes before slicing

2 lbs stew meat (I have used beef and pork - both work well)
put flour and meat into a large ziploc bag and shake to coat meat pieces then place floured meat into the crockpot
spinkle on the following:
1 1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 tsp paprika
Add:
1/2 red onion, large slices
1 red pepper, diced
1 lb package of frozen mixed veggies
boil 3 cups of water and dissolve 3 beef broth cubes then add 3 tsp Worchesterchire sauce and pour over meat and veggies, stir just to mix ingredients
Cook in crockpot for 6-7 hours, stirring occasionally

Pasta & Veggies Recipe
This is a very easy meal to make and great for adding in frsh veggies to our diet, as I tend to use frozen more often. I have no idea how much of each veggie I add it is based on how much I have on hand and how much fits heaping into my large Corelle serving bowl.
I always use fresh veggies:
broccoli
carrots
mushrooms
red pepper
red onion
green onion
celery
I cut these up and put them into a large skillet with some oil and have this on medium to high heat and stir often. I don't like to overdo the veggies so my test is when I can just cut through a carrot easily - the hardness is gone but not the crispness??? Does that make sense? Next time I make it I will try to remember to time this stage.
While the veggies are cooking I start a large pot of water to boil. I add a half a package (about 8 oz) of pasta to the boiling water and cook for 7-9 minutes depending on the type of pasta.
Drain the pasta and add to the veggies (if timed right I usually have the pasta done about the same time as the veggies, but this took some trial and error).
Add half a jar of pasta sauce - I like Classico's Spicy Red Pepper.
Stir and serve.
Optional, if I find can find it on sale I add shrimp - yummy!!! I have been buying the packages of frozen cooked tail on. I simply defrost, remove the tails and add to the veggies, but I don't like them over cooked so I add them only long enough to have them heated.
