Juicy Meatloaf

This recipe came from my mom's church cookbook. I simply adjusted the seasonings to make it "zippier" (Yes that is a technical cooking term, at least it is in my family!)

2lbs ground beef
1 large onion, chopped
3/4 cup oatmeal
2 eggs
1 cup tomato juice (I often use V8)

Seasonings:
1 tsp lemon pepper
1 tsp seasoned salt
1/4 - 1/2 tsp garlic powder
1/2 tsp paprika

Mix together then form into a loaf shape in a 9x13 glass baking dish. Bake at 350 for 1 hour, let stand for 5 minutes before slicing
