Southwestern Pot Roast

This is the most simple meal I prepare - less than 15 minutes!

8 small or 4 med-lrg potatoes, cut into large chunks
1/2 pound baby carrots
1 large onion, cut into large slices

place potatos and carrots on bottom of crockpot

Coat 2-3 lb roast (trimmed of fat) with 1/4 cup of flour (I keep the extra flour I grind when I make bread for this purpose) and place floured roast on top of potatoes and carrots, place onions in any spaces or on top of roast

Pour 1 jar (16-20 oz) medium salsa over all

Cook for 6-7 hours in crockpot

Edited to add that I really must give the proper credit for this recipe, it certainly isn't my idea!! It comes from the Oct-03 #201 issue of Betty Crocker Slow Cooker Meals.
